MF (My Favorite) Jalapeño Cornbread: A Little Heat, A Lot of Comfort

MF (My Favorite) Jalapeño Cornbread: A Little Heat, A Lot of Comfort

There's nothing quite like a warm skillet of cornbread fresh out of the oven — golden, buttery, and just a little crispy around the edges. Add a kick of jalapeño and you've got a side dish that steals the show at every meal, from Sunday gumbo to a weeknight bowl of chili.

I grew up in Louisiana where cornbread was always on the table, and this jalapeño version is one of my favorites. It's simple, quick, and packed with flavor. Whether you're using our MF (My Favorite) Cornbread Mix or building it from scratch, here's how to get that perfect balance of sweet, savory, and spicy.

Why You'll Love This Recipe

  • Ready in under 40 minutes — mix, pour, bake, done.
  • Customizable heat — control the spice by adjusting how many jalapeños (and seeds) you use.
  • One skillet, one bowl — minimal cleanup.
  • Great with everything — pairs perfectly with chili, gumbo, barbecue, or just a pat of honey butter.

Ingredients

  • 1 bag MF (My Favorite) Cornbread Mix
  • 2 large eggs
  • 1 cup buttermilk
  • ⅓ cup melted butter (plus extra for the skillet)
  • 1–2 fresh jalapeños, diced (seeds removed for less heat, left in for more)
  • 1 cup shredded sharp cheddar cheese
  • 1 tablespoon honey (optional, for a touch of sweetness)

Instructions

  1. Preheat your oven to 400°F and place a cast iron skillet inside to heat up while you mix the batter.
  2. Whisk the wet ingredients — eggs, buttermilk, melted butter, and honey — in a large bowl.
  3. Stir in the cornbread mix just until combined. Don't overmix; a few lumps are fine.
  4. Fold in the jalapeños and cheddar cheese.
  5. Carefully remove the hot skillet from the oven, add a pat of butter to coat the bottom, and pour in the batter.
  6. Bake for 20–25 minutes, until the top is golden brown and a toothpick comes out clean.
  7. Let it cool for 5 minutes, slice, and serve warm.

Audrey's Tip

For an extra layer of flavor, sprinkle a little Voodoo Seasoning or Ca C'est Bon into the batter before baking. It adds a savory depth that pairs beautifully with the jalapeño's heat — trust me on this one.

Serve It With

This cornbread is the perfect companion to a big pot of gumbo, a bowl of red beans and rice, or your favorite chili recipe. Leftovers (if there are any) reheat beautifully the next morning with a drizzle of honey.
